Description

Heat the olive oil and butter in a frying pan. Add the onion and mushrooms and cook over a medium heat until any liquid coming out of the mushrooms has evaporated and the onion has softened. Add the parsnip and continue to cook until the parsnip has reduced in volume and the onion has started to caramelise. Add the garlic, dried sage, thyme and lemon zest, then cook for a couple more minutes. Remove from the heat and allow to cool slightly. In the fridge:To store Hairy Bikers roasted vegetable lasagna in the fridge, put it in an airtight container or tightly covered with plastic wrap. It can be refrigerated for up to 3–4 days. Wash the spinach in plenty of water and put into a saucepan. Heat gently until it has wilted down, stirring a couple of times, then drain over a sieve. Leave to cool, then roughly chop. Add the breadcrumbs, pine nuts, lemon zest and juice and the parsley to the bowl with the lentils, then the cooked vegetables. Stir in the egg and the mixture should clump together. Form the mixture into 12 balls of about 40g each and arrange them on a baking tray. Bake them in the oven for 10–12 minutes until lightly browned. Put all the vegetables into a food processor with the remaining sauce ingredients and plenty of seasoning. Pulse until you have a coarse, fairly liquid sauce. Set aside. Popular in the seventies and eighties, homity pies were often seen as somewhat worthy – leathery, unappetising with a smug crust. But we thought this pie deserved a second look. This recipe is the grandson of those early pies and, we bashfully believe, a great improvement. We’ve cut down on the potatoes to make it less heavy and added some broccoli and other root veg – although you can vary these as you like. Celeriac and swede would also work well in this deep-filled homity pie. A great vegetarian dish that can be enjoyed by all. In more recent years homity pie has been popularised by the Hairy Bikers in their Best of British series, and it's this deep-filled version that doesn't skimp on the previously rationed ingredients that is popular today as a tasty and frugal vegetarian pie.

The history of homity pie

Add the chopped tomatoes and beans and stir in the 600ml of water. Season with a good pinch of salt, bring to a simmer and cook for 10 minutes, stirring occasionally. Add the courgette, return to a simmer and cook for a further 10 minutes, stirring regularly. First make the filling. Heat the oil and butter in large frying pan and add the onion and celery. First make the meat sauce. Heat a tablespoon of the oil in a large pan and add the onions, celery and carrots. Cook over a gentle heat until the onions are translucent and soft, then add the garlic and cook for a further 3–4 minutes. Roll out the pastry and use it to line a 20cm cake tin or a deep pie dish. Spoon the filling over the pastry. Whisk the milk and mustard together until you have a thin paste, then stir this into the cream. Season with a little salt. Pour this mixture in a slow and steady stream over the filling so it soaks through the layers of vegetables. Sprinkle the remaining cheese on top.To assemble, put a small ladleful of the green sauce in the base of an ovenproof dish. Lightly toast each tortilla on a dry frying pan, then add a tablespoon of the filling. Top with a teaspoon of soured cream, then roll up and place in the dish. Repeat with all the tortillas, making sure they don’t quite touch, then pour over the remaining green sauce. Sprinkle over the cheese, then bake in the oven for about 30 minutes until the tortillas have browned round the edges and the cheese is bubbling.
