Ground coffee freshness: For each canister, we ground a bag of coffee and made notes on its color, aroma, and texture. Then we placed half the coffee in the canister and followed the included directions to close and seal it, leaving the rest of the coffee in the original bag. After eight days, we examined both batches, comparing their characteristics to each other and to the original notes. We also brewed a cup of coffee using each and compared their flavor and aroma. Roasted coffee beans effectively have a shelf life once roasted. Through the staling process you begin to notice the beans will first lose their natural fresh aromas followed closely by the sweetness and vibrancy of flavours associated with fresh beans. Storing coffee beans properly to keep them fresh requires some sort of airtight seal, so be sure your canister is equipped with one. From vacuum seals to silicone gaskets, whatever you choose should protect from excess humidity and air that can deteriorate beans and grounds. Overall Capacity This is an updated version of a previous Oxo coffee canister. The two are similar in size, price, and design, but the newer model comes with a couple of upgrades, especially regarding its ease of cleaning. It is now dishwasher-safe (aside from the lid) after previously being hand-wash only. I own the larger model, the 1.2 litre, which holds 12-14 ounces of medium roast hole bean coffee. If you have a darker roast, it will take up more space in the jar. The Airscape is equipped with a plunger, which we push down to the coffee level, removing the excess air through the two way valve. This container will keep your coffee fresh more if you don’t have to open the jar daily. Fresh coffee releases CO2, which will eventually displace all of the air, acting as a natural preservative. The two way valve will let CO2 out, but won’t let oxygen in. So, let's say your coffee has a 10-day window where it is in its prime (beginning 3-5 days off the roast date). Storing your coffee in Atmos will effectively give you a 15-day prime window. That's not to say your coffee isn't good after this timeframe, just that the unique flavor profile will begin to fade each day thereafter. On a side note, coffee that is more than 20 days off roast is the prime candidate for a killer cold brew, so don't let it go to waste if you find it no longer yields the perfect hot cup. Since Atmos is a sealed environment, will this mean there is a buildup of CO2? Most of the coffee canisters on the market aren’t worth. If you are looking to buy a cheap canister that will extend the shelf life of your beans dramatically, you are going to be disappointed. The resealable bags with a one way valve you get from the roaster are pretty decent. They compete with many coffee storage canisters, and they don’t cost anything. And if you don’t hate the resealing process every time you take out beans, they are pretty good. A large part of what makes the item effective is its cork lid. It takes a firm push to get the lid on, indicating that the silicone gasket forms an airtight seal. Yet, it's not difficult to put the lid on; instead, it's just the right amount of tension. After storing whole-bean coffee in the canister for eight days, it came out fragrant and made a flavorful brew. We stored ground coffee in the canister for another eight days and it came out less vibrant but still sufficient. It's also convenient that the canister is dishwasher-safe, which isn't the case with many other models we tested. Good canisters hold the vacuum seal longer, up to a few days. The not so great ones hold the seal for a bout a day, which is actually what most of us need. We need that vacuum to hold from one day to the next, when we have to open the coffee jar anyway, to brew some joe. Regardless, if you are looking for ground coffee storage, the really great ones are not an option, since the vacuum valve are prone to get clogged with coffee particles. You can use any of the airtight canisters to store your ground coffee. I know this isn’t what you want to hear. Ground coffee is more sensitive to oxygen than whole bean coffee, so it would benefit more from a vacuum canister. We were immediately impressed by the item's weight and durability, especially given its affordable price. The sliding drawer worked smoothly after long-term use and never squeaked or creaked. The drawer has to be cleaned by hand, but this shouldn't be much of an issue since it stores K-Cups instead of actual coffee beans.
Atmos is available in three sizes. The .4 L Atmos holds up to 6 oz of coffee beans, the .7 L canister holds up to 10 oz of coffee beans, and the 1.2 L canister holds up to 16 oz of coffee beans. But remember, some varieties of coffee beans are bigger than others (looking at you, Pacamara).
